Grandma Euterpe’s (“yaya Efterpi’s”, γιαγιάς Ευτέρπης) roast chicken “psito kotopulo” (ψητό κοτόπουλο) with lemon, olive oil, oregano. More herbs optional! A classic Greek dish. The potatoes collect all the juices and flavours while they cook slowly under the chicken. Pieces of “kefalotiri” (κεφαλοτύρι) will make it richer.
